Or at least, it WOULD HAVE BEEN, if 2020 hadn’t decided to have one continuous panic attack for half the damn year. I’m actually pretty convinced that the world is on the verge of ending, but I guess that’s another conversation for another day.

So even though we aren’t allowed to have “gatherings”, I’m sure we can all find ways to celebrate with each other today. Make yourself some tacos, whip up a strawberry lime margarita and put that Zoom subscription to good use!

Given our current quarantine sitch, I wanted to create a margarita recipe that can be made using some basic pantry staples: tequila, orange juice, lime juice and strawberry jam.

YUP, you heard right — strawberry jam. I’m pretty sure everyone has some hidden in the depths of their pantry, right? and thankfully, citrus lasts for weeks in the fridge, so hopefully you can dig an orange and lime out from the bottom of your produce drawer.

Don’t have an orange on hand? Use OJ straight from the carton. No OJ? Substitute with triple sec or cointreau — any orange-flavored liquor will suffice.

You guys know how I roll. Make do with what you’ve got.

The consistency of this margarita is right up my alley. I slightly “under blend” it so that there are still little bits of jammy goodness in every sip. You can certainly blend it up until completely smooth, but I’m all about a variety of textures in each meal… or in this case, drink.

Personally, I’m not big on overly sweet drinks (though my taste buds know no limit when it comes to cookies and cake and chocolate… go figure). So in my opinion, the sweetness of the jam along with freshly squeezed fruit juice negates the need for any extra sweetener. But if your sweet tooth tendencies happen to include boozy beverages, you may want to increase the amount of jam to really pump up the sweetness.

Ingredients
  • 1½ ounces blanco tequila (I prefer Milagro Silver)
  • 1 ounce freshly squeezed orange juice
  • juice from ½ lime (roughly ½ ounce)
  • 1 teaspoon strawberry jam
  • strawberry / lime slices for garnish
Instructions
  1. Add tequila, OJ, lime juice and strawberry jam to a blender, and pulse until smooth.
  2. Let the mixture rest for a minute or two, until the foam has disappeared.
  3. Pour into a glass filled with ice, and garnish with strawberry and/or lime slices.
Notes / Variations
If you prefer a sweeter margarita, you may want to increase the strawberry jam to 1½ or 2 teaspoons.

TO MAKE FROZEN: add 3 or 4 ice cubes to the blender with the remaining ingredients, and pulse until smooth. Pour into glass, and serve immediately.
