I firmly believe that all celebrations should include funfetti.

First and foremost, the celebratory news: I got a new job! To avoid going into a whole bunch of details (just yet, at least), the important item to take away here is this: I mentioned that 2014 is going to be a big year, and I firmly believe that this is just the start :)

In light of that fact, I’ve realized recently that if ever there is a time to take risks in your career/life/etc, age twenty-seven [almost twenty-eight, gross] is it. Go big or go home, you know? Granted, the only real risk associated with this new job is the fact that it is completely outside of my comfort zone — which terrifies me, of course. I mean, I have no idea if I’m going to love it or if I’m going to absolutely hate it! Enter: risk (at least in my world). Fear of the unknown is a major player in most of my decisions, so I’m relatively proud of the leap I’ve taken accepting this job!

That being said, I’m suuuure I’ll tell you all a little more about this position in later posts. But for now — time to focus on finishing out strong. Only a week and a half left at my current job — woop woop! Then comes the celebrations, which of course means: funfetti. Along with extravagant dinners, excuses to get together with friends & family, and many, many bottles of wine… because isn’t that how everyone celebrates!? :)

Funfetti Cookies | Confessions of a Midnight BakerOh, and before I forget — this recipe! It honestly is the easiest thing I’ve done in weeks, and I urge you to try it out. Grab a box of your favorite brand/type of cake mix, add in a few basic ingredients and the add-ins of your choice, and voila! Like I said — it’s basically cheating. I mean, who makes cookies out of… cake mix?

ME, that’s who! And since I just managed to snag an awesome new job, you obviously should listen to me. I know what’s up.

Yield: 2 dozen cookies
Ingredients
  • 1 box of your favorite brand of funfetti cake mix
  • ½ cup canola oil
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 egg
  • extra rainbow jimmies, if desired
Instructions
  1. Preheat oven to 350 degrees F; line cookie sheets with parchment paper.
  2. In a large bowl, combine all ingredients until smooth, using either an electric mixer or a spoon. Mix in more jimmies, if desired. Shape dough into balls that are slightly less than a tablespoon in size, and place two inches apart on your cookie sheets.
  3. Bake cookies for 10 to 12 minutes or until the bottoms of the cookies just start to brown; the centers will likely still be a little soft and the cookies will be light in color. Cool for a few minutes, then move to a wire rack to cool completely.
  4. Store in an airtight container for up to a week.
Notes / Variations
This basic recipe can be used with any type of cake mix, changing up your add-ins as desired.
